This started as honey from our own hives. Then it sat for six months in an apple whiskey barrel.

What comes out is still honey but the barrel has done its work. You get the amber body of our summer honey first, then baked apple, a little oak, and the warm finish of whiskey without turning the jar into a cocktail.

We do not flavor this with extracts or syrups. The honey goes into the barrel. Time and wood do the rest. Every batch will lean a little different depending on the barrel and the harvest. That is the point of aging it this way.

This is a small lot. When the barrel is empty, the listing goes with it until the next one is ready.
